jailbreaking your phone does not change your service in any way it just unlocks your phone so that you can customize it add homebrew app (such ass emulators) and access to a lot of free stuff

You must first know if you have a phone that is locked to a specific provider.
If you have a locked phone, you should not update to 2.2.1 because that will also change the baseband unless you use PwnageTool 2.2.5 (only available in Mac) to upgrade which preserves the baseband. If you are using Windows, you need a custom 2.2.1 firmware (created by Mac user with PwnageTool 2.2.5) that preserves the baseband or your phone will be locked.

No, When you jailbreak a iphone your just unlicking it to download free third-party apps & also be able to customize your homescreen with Themes.
